Stoking question

Brand new here, quick question. If I stroke out my 340, would I have to get new heads? Also how far should/can i go with the stroke?

No. You will not need new heads unless;
a) you plan to make more HP than the existing heads can provide
b) you need different cc chambers because of difficulty making the compression ratio you want.
But in most cases the stock heads will be OK. Maybe with a little mild porting. But as I say, that boils down to how much power you want to make.
