My car originally had a 318, but the original engine has been replaced. I know the new engine is a small block, and I know it has a 4bbl. carb. Other than that I have no idea...

Two ways to easily tell.
First is the Engine Identification Number (EIN)
On small blocks it is stamped onto the front of the drivers side of the block just below the cylinder head. There shouls be one or two letters that are a plant code and then there should be three digits that are the engine size.
You can also check the CASTING number which is cast onto the side of the block. It will also have a casting date which will tell you how old it is.
The small block casting numbers are;
2536030 = 318
2780930-340 = 340/4bbl
3577130TA-340 = 340 sixpak
3418496-360 = 360 (71-74)
3870230 = 75 and later 360
