What's a eazy way to blosk off the heat riser? Also how well does the stock valley tray seal? Any sealer?

I always use sealer on the valley tray. Sparingly around the ports so as to not squeeze into the port when tight.

You need a lot of sealer on the front and rear rails where it seals against the block. But again be careful because you don't want bits dropping into the valley.

You can buy a valley tray with the heat riser blocked off. Or you can weld or epoxy a blanking plate into the intake.
