Engine storage question

I'm building a 500 stroker for my car, I have just about everything for the engine but the rotating assembly. Currently the engien is still assembled with the stock stuff, all holes a taped offed except the valve area it is open. the car wont be ready for the engine for awhile, should I go ahead and take the block apart, have it machined assemble the stroker, or leave the oem stuff in it until im ready to put it into the car?

I sent my engine to the builder with the note that the car would be down for several months while doing the bodywork. He primed the engine , basicly ran it quickly with oil in it, to coat the insides. taped off the exhuast ports and intake manifold, put a plasitc bag on it and said it would be fine till bodywork done. Being in the desert of las vegas 2% humidity today with an outside temp of 118 degrees, may be different in your area. I think i would leave it till ready if i had to do it over.
